A Sampling of Cabernet Sauvignon from the Mountains and Valley FloorMountain AVAs average 600-2000 feet above sea level and experience cooler daytime temperatures and warmer nights resulting in a longer growing season. Due to wind exposure and lack of water, yields are naturally lower with smaller bunches and smaller berries with thicker skins. Mountain fruit is often characterized by its high acid, firm but integrated tannins and darker fruit flavors with a mineral character.With the Vaca Mountains on one side and the Mayacamas Mountains on the other side, the valley floor of Napa Valley expands 30 miles. The fog settles on the valley floor at night and into the morning creating cool nights and warm days which helps grapes retain greater natural acidity.
